Day 29 of The Melissa Gorga Experiment was rough.
It was nearing 4:00- the hour when I have to start dinner. Or give up.
I was EXHAUSTED from only having gotten two or three hours total of sleep the night before. My two-year-old had a fever, so I had already fed her an early dinner of soup and crackers.
It would have been so easy to just say Fuck it and order Pizza Hut. Mmmm greasy, thick Pizza Hut pizza. And breadsticks (my fave).
But then the Melissa Gorga in my head was like, “Pizza Hut is gross and it will make you fat. Your husband hates it, anyway. He wants you to cook him dinner. NO ORDERING PIZZA! And brush your hair, godammit!”
So I decided to make a relatively easy dinner- spaghetti and meatballs. Oh and a salad. And then I got the bright idea to make biscuits, because my husband loves them.
I Googled “easy garlic biscuits.” Everything led me to variations on the Red Lobster cheddar biscuits. That’s great, except I had no cheddar cheese.
The fun part came when I went to get the pasta from the cabinet. There wasn’t any.
I had bought a huge box of spaghetti packages from B.J.’s a few months back. It seemed like we would never run out. Until we did. Today.
I emailed my husband and asked if he could stop and get spaghetti and cheddar cheese.
Then I made the meatballs, the salad, and started the biscuits. (I also didn’t have breadcrumbs for the meatballs, so had to make this Paleo recipe.)
My husband arrived with the rest of my ingredients and we ended up with a delicious dinner.
The biscuits were AMAZING. Here is the recipe I used. I’m hoping they will still be good the second day, because we have six left.
We didn’t get to spend time in the evening hanging out together, because I went to bed early. That decision may or may not have been influenced by the fact that there was hockey on.
And for the best part about Day 29- my husband decided he would get up with the baby in the middle of the night so I could get some rest. I wonder if Joe Gorga ever did that…
